Green Tip Make your own brown sugars
To make soft light brown sugar, start with 200g of granulated sugar, as in the last green tip and add 15g (½ oz) black treacle. Warming the tin of treacle for 15 minutes on a radiator will make it easier to pour. Stir the mixture with a metal spoon then put the bowl into the microwave for 15 seconds. Using your fingers rub the treacle into the sugar for about 1 minute then you should have soft light brown sugar. If you do not have a microwave, pop the bowl into the oven on a low heat of 80⁰C (175⁰F) for 10 minutes. To make soft dark brown sugar repeat the above but use twice as much black treacle (30g) and you might need 30 seconds in the microwave. Store your brown sugars in sealed labelled jars.
